Thai Cauliflower Curry in a Hurry Recipe
Such a simple, delicious recipe to make in under 20 minutes. You can add any vegetable to the curry, that you like instead of cauliflower. Tastes great by itself or over a bowl of quinoa or fried rice.
Instructions
  1. Heat a large soup pot or sauce pan over medium high heat.
  2. Add curry paste and cauliflower to pot and mix well to coat with curry paste. Stir-fry for five minutes.
  3. Add coconut milk and stir.
  4. Bring to a boil and then turn down heat to let simmer for 15 minutes, stirring occasionally. Enjoy with rice.
