Sweet Potato Pecan Casserole with Maple Caramel Topping
Everyone loves sweet potato casserole with crunchy maple pecans on top when it’s healthy and naturally sweetened with maple syrup and coconut sugar. What's not to love about that? This is our favorite dessert dish for bringing to potlucks during the holidays.
Ingredients
Casserole:
  • 5 large sweet potatoes
  • 1 can coconut milk
  • 1/4 cup maple syrup
  • 1 Tablespoon ground flaxseed
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
Topping:
  • 1/2 cup coconut sugar
  • 1/2 cup chopped pecans
  • 1/2 cup old-fashioned oats
  • 1/2 cup almond flour
  • 2 teaspoon vegan butter
Instructions
  1. Peel and chop the sweet potatoes into large chunks. Place in large saucepan and cover with water, bring to a boil and reduce to simmer. Simmer for another 15-20 minutes. Drain and cool.
  2. Mash the potatoes with masher then add coconut milk, maple syrup, flaxseed, vanilla, cinnamon, nutmeg and mix until everything is combined.
  3. Preheat your oven to 350°F
  4. In a mixing bowl, add the pecans, oats, oat flour, and brown sugar. Add the vegan butter and mix everything together.
  5. Spoon the sweet potato mixture into a casserole dish and sprinkle on the brown sugar and pecan mixture. Bake uncovered for 40-45 minutes, until the top is golden brown and the sweet potatoes are bubbling with maple syrup.  Enjoy!
