One pot Chickpea, Cauliflower Maklouba Mediterranean Dish

Recipe for Mouthwatering, Cauliflower Maklouba Mediteranean one pot rice, spice and vegetable dish! This dish will give the WOW effect at any holiday dinner table. Cauliflower Maklouba Dish

Ingredients

3 cups basmati brown rice1 head small cauliflower1 can chickpeas drained 1 cup sliced carrots1 small sliced eggplant 1 medium sliced potato 1 teaspoon allspice1/2 teaspoon cinnamon1/2 teaspoon cumin1 teaspoon turmeric 1/2 teaspoon salt1 cup chopped cilantro 5 quart pan

Garnish with Pine nuts or toasted almonds

Instructions

Wash the rice and cook in a pot like you normally do. Fluff with fork and keep aside. Preheat oven to 450 degrees. Line a baking tray with parchment paper. Mix half of the dry spices and sprinkle over the vegetables eggplant, carrots, potato and cauliflower. Slightly rub spices on vegetables. Bake in oven for 15 minutes until golden brown. Remove from oven and cool.

Now it is time to layer the dish. In a 5 quart non stick pan place the whole cauliflower upside down. Put a layer of rice and a layer of eggplant next. Add another layer of rice layer of potato and carrots. Now end with the rice filling and chickpeas it over the top. Sprinkle each layer with dry spices and cilantro. Cover tightly with aluminum foil and add lid. Place on the cook top for 30 minutes on medium heat.

Remove from the heat and allow the pot to sit for 5 minutes before flipping over.

To serve, uncover the pot and invert on a big platter. Holding the two together, flip the pot over onto the platter. Do not remove the pot for a few minutes. When you are ready to remove tap on the bottom of the pan and gently remove the pan. Sprinkle with cilantro, pine nuts or almonds and serve. Enjoy!
