Vegan meal prep is all about cooking a few healthy meals ahead of time and portioning them out through the week.
You decide what to eat, based on the recipes you picked and batch cook your meals all together.
Here’s what we eat in a day:
Breakfast: Usually a protein shake with fresh fruit or frozen berries. OR a bowl of steel cut oats, with berries, almond butter and a banana.
Lunch: lots of veggies + bean stew which is very high in protein. Lentils, with some brown organic rice.
Dinner: fresh mixed veggies, chickpeas, sweet potato and a small salad.
