Breakfast for a crowd is fast and no-sweat with these easy-fix pancakes that can be served right from the sheet pan. Just cut small circles out of the banana nut bread and add fig jam and fresh berries.

  1. Heat oven to 350° F. Grease bottom only of 9 x 5 x 3-inch loaf pan.
  2. In large bowl, beat sugar, bananas, and vanilla until smooth.
  3. Stir in almond milk and vinegar. Add flour, baking soda and salt; stir just until moistened.
  4. Stir in walnuts. Pour into pan. Bake for 1 hour and let cool! Enjoy!!
