Teaching how to cook Malai Kofta + Daal Makhani + Baighan Bhurta and Couscous Indian Vegan Cooking Class

Malai Kofta was the hit of Night! These delicious melt in your mouth malai koftas are made with potato and tofu or you can use any other vegetables such as cauliflower.  Then they are baked until crispy and served mixed with the spicy, delicious tomato coconut cream curry. Took mom’s favorite kofta recipe and totally veganized it. For the first time, I added tofu to the koftas and they added a creamy soft texture mixed with the potatoes. You can make these koftas with cauliflower too instead of potatoes and tofu.

I love teaching people how to make yummy, delicious Indian Fusion Vegan food that happens to be healthy, whole-food plant-based dishes without using oil. My classes are very interactive and lots of fun with Bollywood tunes in the background and questions about where to get the indian spices. The classes are perfect for a novice or someone more familiar with indian cuisine.

We had so much FUN in our cooking class on May 18, mingling, cooking, learning, drinking masala chai and eating the scrumptious jalebis for dessert.

Couscous with Chickpeas and Mint
This delicious couscous salad is ready in 15 minutes and contains whole wheat couscous, chickpeas, mint and aromatic indian spices. It is vegan and it is gluten-free. Adding the chickpeas to this dish adds more flavor and it is filling. The garam masala adds a nice kick to the flavor and tastes very rich and nutty. Perfect for an afternoon snack or an addition to salad. Make a buddha bowl as couscous for the base more filling for dinner time. jaxvegancouple.com
