Baked Veggie Potato Fritters (Pakoras)

Pakoras or fritters are a very popular Indian fried snack, unbelievably addictive and highly tasty. We took our favorite fried fritters and gave them a healthy makeover, without losing any of their flavor. We made them here without frying but baking instead. A much healthier version you can also try it in the air fryer. 

Perfect snack for Superbowl Sunday or to bring to a vegan potluck.  Serve these pakoras with a fresh tomato or cilantro chutney.

Ingredients
  • 2 cups Chickpea flour Gram flour, Garbanzo flour, besan
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp garam masala or curry powder
  • 1.5 tsp cumin
  • ½ tsp turmeric
  • ½ tsp crushed red pepper
  • ½ tsp garlic powder or 2 cloves fresh crushed garlic
  • ½ head small cauliflower chopped into small bite-size pieces (about 3 cups)
  • 1 small/medium onion finely chopped
  • 10 jalapeños slit remove seeds
  • 1 large carrot grated
  • 1 small red potato grated
Instructions
  1. Preheat oven to 500F. 

    Prepare veggies and then put them all into the batter, mixing well to coat.

    Using a tablespoon take scoops of battered veggies and drop onto the baking sheet.



  2. In a large bowl, mix together dry ingredients. Stir in enough water to create a batter, almost pancake-batter consistency, but a little thicker. It took about 1¼ cups of water. Let batter sit.

  3. Bake for 8-9 minutes, then flip and bake another 10 minutes, until golden brown.

  4. Serve hot with green chili or an Indian tomato chutney or just enjoy them on their own! Enjoy!

  5. These can also be placed in the air fryer too instead of baking them in the oven.
